What Is King Ranch Chicken Casserole?

Corn tortillas, shredded cheese, cooked chicken, vegetables, canned tomatoes, and two types of canned cream soup make up King Ranch Chicken Casserole. This is a hearty and comforting supper.

Ingredients You’ll Need

  • onion
  • bell pepper
  • cooked chicken
  • canned condensed cream of chicken soup
  • canned condensed cream of mushroom soup
  • canned diced tomatoes with green chilies
  • corn tortillas
  • cheddar cheese

How to Make Texas King Ranch Chicken Casserole

  • In a large pan, sauté the onion and bell pepper for approximately 5 minutes, or until soft. Place aside.
  • Combine the chicken, condensed cream soups, tomatoes, and sautéed bell pepper and onion combination in a large mixing bowl.
  • Arrange half of the tortillas in an equal layer on the bottom of the baking dish. It’s OK if the tortillas overlap slightly.
  • Layer half of the chicken mixture on top of the tortillas. Half of the cheese should be sprinkled on top.
  • Repeat until all of the ingredients are used, concluding with the leftover cheese on top.
  • Bake uncovered at 375°F for 25-30 minutes, or until bubbling and heated through.

Tips and Tricks

  • This dish may be made up to a day ahead of time. Refrigerate the dish after wrapping it in plastic wrap. Allow the casserole to come to room temperature for 30 minutes before baking as directed in the recipe.
  • Uncooked casserole may also be constructed and frozen. It may be cooked immediately from the freezer in a 350°F oven without thawing. Bake the casserole for 30 minutes, covered with foil. Remove the foil and continue baking for 15-30 minutes, or until the cheese bubbles.
  • Refrigerate leftover casserole in an airtight container for 3-4 days. Microwave each portions until well warmed.

How To Freeze King Ranch Chicken

Prepare the dish but do not bake it. Wrap tightly in plastic and then in foil. Place in the freezer for up to three months. Thaw the casserole in the fridge overnight before cooking. Allow it to come to room temperature for approximately 30 minutes before baking according to the recipe directions.

 Variations

  • To add flavor and texture, substitute the corn tortillas with finely broken tortilla chips. Try several types of Doritos tortilla chips!
  • For a spicy twist, use Monterey Jack or Pepper Jack cheese for the cheddar.

Instructions 

  • Preheat the oven to 375 degrees Fahrenheit. Set aside a 13 x 9-inch baking dish sprayed with cooking spray.
  • In a large pan, sauté the onion and bell pepper for approximately 5 minutes, or until soft. Place aside.
  • Combine the chicken, condensed cream soups, tomatoes, and sautéed bell pepper and onion combination in a large mixing bowl.
  • Arrange half of the tortillas in an equal layer on the bottom of the prepared baking dish. It’s OK if the tortillas overlap slightly.
  • Layer half of the chicken mixture on top of the tortillas. Half of the cheese should be sprinkled on top.
  • Repeat until all of the ingredients are used, concluding with the leftover cheese on top.
  • Bake for 25-30 minutes, uncovered, in a preheated oven, until bubbling and cooked through.
  • Serve with sour cream and diced avocado.
