What is Crawfish Monica?
Crawfish Monica is a traditional New Orleans spaghetti dish cooked with crawfish and Cajun seasonings and topped with a creamy cheese sauce. The meal was invented by Chef Pierre Hilzim, the creator of Kajun Kettle Foods Inc., and named after his wife, Monica.

How to Make Crawfish Monica
- Melt the butter in a Dutch oven or large saucepan over medium-high heat. Cook until the onion is softened.
- Bring a large saucepan of water to a boil, then add the pasta. Cook until the pasta is al dente, then drain. Place aside.
- Mix in the garlic, paprika, salt, garlic powder, cayenne pepper, oregano, thyme, and pepper. Stir continuously for 30 seconds before adding the wine. Cook until nearly all of the wine is gone.
- In a small mixing dish, combine the cornstarch and milk. Stir in the remaining milk carefully after adding the onions and spices. Reduce the heat to medium and simmer for 5 minutes, stirring often, until the sauce thickens.
- Cook for 2 minutes after adding the crawfish tails. Stir in the lemon juice, as well as the optional green onion and parsley. Take the pan off the heat and whisk in the Parmesan cheese. Enjoy the sauce with your cooked pasta!
