How to Make Stuffed Peppers Without Rice

  • Wash the bell peppers, cut them in half and remove the membrane and seeds. Place the peppers in a baking dish, cut side up and sprinkle with salt and pepper.
  • Saute the ground meat in a skillet for about 6-7 minutes until cooked through. Drain the grease and transfer the meat to a bowl.
  • Saute the onion, garlic, and riced cauliflower for about 4-5 minutes, until softened.
  • Add the marinara sauce, basil, sea salt and ground pepper to the same skillet over medium low heat. Cook for approximately 2 minutes, stirring often.
  • Stir in the ground meat and continue to cook until heated through.
  • Stir in 1/2 cup of the shredded cheese.

Ingredients 

  • 1lbground beef
  • 3bell peppersmixed colors
  • 1/2cuponionchopped
  • 3tspgarlicminced
  • 2cupsriced cauliflower
  • 1 1/4cupmarinara sauce
  • 1tspdried basil
  • 1/2tspsea salt
  • 1/4tspground pepper
  • 1/2cup3-blend shredded cheese

Instructions 

  • Preheat the oven to 350F.
  • Remove the membrane and seeds from the bell peppers after washing them.
  • Place the peppers cut side up in a baking tray and season with salt and pepper.
  • Cook the ground beef in a pan for 6-7 minutes, or until it is cooked through. Remove the meat from the pan and place it in a basin.
  • Cook for 4-5 minutes, or until the onion, garlic, and riced cauliflower are softened.
  • In the same pan, over medium low heat, combine the marinara sauce, basil, sea salt, and ground pepper. Cook for approximately 2 minutes, stirring often.
  • Continue to cook until the ground beef is cooked completely.
  • Stir in 1/2 cup of the shredded cheese.
  • Fill the peppers with the meat and sauce mixture. Top each pepper half with a tiny tablespoon of marinara sauce and a sprinkle of shredded cheese.
