How to Make Dessert Empanadas

  • Preheat the oven to 425 degrees Fahrenheit and prepare a baking sheet with parchment paper.
  • In a bowl, toss the apples in the lemon juice.
  • Combine the sugar and spices in a separate dish and sprinkle over the apples. Set aside after tossing the apples to cover them.
  • Unroll the pie dough on a gently floured board. Roll it out a bit using a rolling pin.
  • Cut 8 equal-sized rounds of pastry using a 4-inch round cookie cutter.
  • Place the rounds on the prepared baking sheet, then top each with an apple wedge that is slightly off-center.
  • Melt the caramel pieces and milk together in a microwave-safe dish for 30 seconds on high. Stir constantly for 30 seconds, or until the caramel is smooth and completely melted.
  • Drizzle 1 teaspoon caramel sauce onto each apple. Make careful to keep the caramel away from the pastry round’s edges.
  • Brush the pastry rounds’ edges with the beaten egg and push the edges together to seal. Crimp and seal the edges tight using a fork.
  • Brush the tops of the empanadas with beaten egg and, if preferred, sprinkle with sugar.
  • Bake the pastry for 12-14 minutes, or until golden brown.
  • Allow it cool for a few minutes before serving with vanilla ice cream. If you have any remaining caramel, sprinkle it over the top!
