This tasty curry sauce may be used as the foundation for a curry meal with chicken or shrimp, or it can be eaten with rice, potatoes, or vegetables!

This wonderful curry sauce takes about 35 minutes to create. For a nice snack, combine it with a can of tuna, add it to sautéed vegetables, or use it as a dip for naan bread.

How to Make Curry Sauce

  • Pour the coconut milk into a small saucepan set over high heat. Add the red curry paste, peanut butter, garlic, lime juice, sugar, and fish sauce after it has reached a soft boil. Cook, whisking constantly, for approximately 15 minutes, or until the sauce has thickened and decreased.
  • Cook for another 5-10 minutes after adding the crushed peanuts. When the sauce coats the back of a spoon, add tiny quantities of water or broth and whisk until the desired consistency is reached. If the sauce separates, forcefully whisk it until smooth.
  • Garnish with crushed peanuts or scallions if desired. Use as a basis for your favorite curry meal or serve over rice, noodles, or mashed potatoes.

Tips and Tricks

  • This curry sauce will thicken as it cooks. Reduce the cooking time or add extra liquid to get a thinner sauce. You may alternatively leave out the peanut butter and crushed peanuts, but both contribute taste and texture to the sauce.
  • Replace the fish sauce with soy sauce or another vegan-friendly choice to make a vegan curry sauce.
