- 2cupsshredded zucchini
- 2cupsall-purpose flour
- 1 1/2cupsgranulated sugar
- 1/2cupvegetable oil
- 1/4cupunsweetened cocoa
- 2teaspoonsvanilla extract
- 1teaspoonsalt
- 1 1/2teaspoonsbaking soda
- 1 1/4cupssemi-sweet chocolate chipsdivided
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Set aside a 913 baking pan sprayed with frying spray.
- Combine the sugar, oil, and flour in a stand mixer. Mix until the mixture resembles wet sand. Mix in the cocoa, shredded zucchini, vanilla extract, salt, and baking soda on low speed. Mix until everything is properly blended. Add one cup of the chocolate chips and mix well.
- Sprinkle the remaining chocolate chips over the batter in the prepared pan. Bake for 28-32 minutes, or until a toothpick inserted into the middle of the brownies comes out clean and the brownies are set.
- Place on a wire rack to cool fully. Serve cut into squares.
