Ingredients
- 22Oreo cookies(Chop 6 of them into small pieces)
- 16ouncescream cheesesoftened
- 1/2cupgranulated sugar
- 1/2tspvanilla extract
- 2eggs
- 1/2cupsour cream(or plain Greek yogurt)
Instructions
- Preheat the oven to 325 degrees Fahrenheit. (Check your oven temperature, since a higher temperature might cause the cheesecake to break.)
- Fill a muffin pan with cupcake paper liners. Fill each paper cup with one Oreo cookie. Place aside.
- In a medium mixing bowl, combine softened cream cheese and sugar. Using a hand mixer, beat on medium speed.
- Then stir in the vanilla and eggs. Mix until smooth and lump-free.
- Mix in the sour cream until well mixed. Tap the bowl a few times on the counter to expel any big air bubbles.
- Stir in the chopped cookies and mix well with a spatula. (Avoid crushing oreos into tiny crumbs.)
- Spoon the batter on top of the oreos, nearly to the top. It should be noted that cheesecake will not rise as much as a typical cupcake.
- Place in the lowest third of the oven and bake for 20-25 minutes, or until the sides begin to brown. Keep in mind that traditional cheesecake is intended to be light, so you’re not aiming for golden brown.
- Remove from the oven and place on cooling racks to cool.
- Refrigerate for 4 hours or overnight. Serve and have fun! (They may be kept in the fridge for up to 5 days.)
Notes
- Bring the cream cheese at room temperature before making the mixture to guarantee a smooth texture for your cheesecake bites.
- Don’t overbeat the eggs! Stop after they’ve been blended with the rest of the components.
