- cupquick oatsor oat bran
- 2tspbaking soda
- 1/4tspsalt
- 1large egg
- 1cupbuttermilksee note
- cupmaple syrup
- 1tspvanilla extract
- 1/3cupcanola oilor sunflower oil
- 1cupfresh blueberriesor frozen blueberries (8 oz)
Instructions
- Preheat the oven to 400F (204C).
- 12 standard-size muffin cups, oiled (see note). Alternatively, use cupcake liners to line the pan.
- Combine the flour, oat bran, baking soda, and salt in a large mixing basin.
- In a medium mixing bowl, combine the egg, buttermilk, maple syrup, vanilla extract, and canola oil.
- Whisk the wet and dry components together until thick and smooth.
- Toss the blueberries with 1 teaspoon flour to coat. This will keep them from sinking to the bottom of the pool.
- Fold the blueberries into the batter.
- Fill the muffin cups halfway with batter from the prepared muffin pan.
