Ingredients 

  • 1poundstrawberries sliced
  • 1/4cupwater
  • 1 teaspoonslemon juice
  • 1/4cupsugar

For thickening the sauce

  • 1tablespooncornstarch
  • 1tablespoonwater

Instructions 

Make Strawberry Sauce

  • Strawberries, water, sugar, and lemon juice in a large pot over high heat. Bring to a boil, stirring constantly.
  • Reduce the heat to low and continue to cook for 10 minutes, or until the strawberries are mushy.
  • Remove from heat and blend the strawberries gently (I used an immersion blender.)
  • Strain the mixture through a strainer.
  • Then pour the liquid back to the saucepan on low heat.

Thicken the Sauce

  • Combine cornstarch and 1 tablespoon water in a small bowl.
  • Pour the cornstarch slurry into the strawberry sauce that is boiling. Constantly stir.
  • Increase the heat to high and continue whisking for 5 minutes, or until the mixture thickens into a glaze.
  • Remove from the fire and place in a basin or container to cool.
  • Once it has reached room temperature, put it in the refrigerator. Serve it as a garnish on cheesecake, doughnuts, and pie, among other things.
