- 2pounddiced boneless pork shoulder
- 1tablespoonmirin
- 1teaspoonminced ginger
- Salt and black pepperto taste
- 3tablespoonsvegetable oildivided
- 1/2cupchunjang Korean black bean paste
- 1tablespoonsugar
- 1/4poundpeeled chopped large shrimpoptional
- 1diced yellow onion
- 2diced zucchini
- 1cupwater
- 2 tablespoons cornstarch plus 3 tablespoons water1
- 24ozfresh jajangmyeon noodles
Instructions
Marinate the Pork
- Marinate the pork shoulder in mirin, ginger, salt, and pepper.
- Set aside to marinate after thoroughly mixing and coating all pieces.
Make the Jajang Sauce
- Heat a big pan with some oil over medium heat.
- When the oil is heated, add the black bean paste and sugar and mix well. Continue to whisk while the paste cooks and toasts.
- When finished, transfer the mixture to a small bowl and set aside until ready to use.
Make Jajangmyeon
- Return the pan to medium heat, add the oil, and sauté the marinated pork from the previous step.
- After a few minutes, add the shrimp (optional) and cook for another few minutes before transferring to a platter and setting aside.
- Return the skillet to medium-high heat, add the remaining oil, and cook the onion for 3 to 4 minutes.
- Continue to sauté the zucchini for another 2 to 3 minutes.
- Return the pork and shrimp or pork alone combination to the pan and cook for another 2 to 3 minutes.
- Incorporate the roasted black bean paste from earlier into the meat and vegetable combination until evenly covered.
- A little at a time, add water until the mixture is smooth and simmering.
- Stir in the cornstarch slurry to thicken the sauce. Remove from the heat and set aside to keep warm.
- Fill a big saucepan halfway with water and set it over high heat to cook the noodles. When the water comes to boil, add the noodles and simmer until tender, stirring periodically. The noodles will be cooked but still chewy after around 5 to 6 minutes. Rinse the noodles carefully after draining them. Divide the noodles into serving dishes and top with the heated sauce.
