Steak taco marinade
- 2tbsplime juicefrom 1 lime
- 3tbsporange juicefrom 1 orange
- 2tspground cumin
- 2clovesgarlicminced or 1 tsp garlic powder
- 1jalapeo pepperminced optional
- 2tbspolive oil
- salt and pepperto taste
- 1lbsteakflank steak or skirt steak (see note)
Grilling and assembly
- cooking oil spray
- 8 tortillascorn or flour, 8-inch size
- 1/2medium red oniondiced
- 1medium tomatodiced
- guacamoleoptional, or diced avocado
- queso fresco cheeseor Cotija cheese (see note)
- fresh cilantro
- fresh limewedges
Instructions
- Combine the lime juice, orange juice, cumin, garlic, olive oil, salt, and pepper in a medium mixing bowl.
- Place the steak in the bowl and evenly coat with the marinade. Refrigerate for up to 8 hours or leave at ambient temperature for one hour (see notice).
- Meanwhile, preheat the grill to medium heat or 400F (204C) and prepare the toppings, such as diced tomatoes, diced red onion, and crumbled cheese.
- Spray the grill grates with oil spray.
- Place the steak on the grill and cook for 3-4 minutes each side until medium-rare or medium, checking doneness with an instant-read thermometer (130-140F or 54-60C).
- Transfer the steak to a cutting board, cover with foil, and set aside for 5 minutes to rest.
- Cut the steak crosswise, against the grain, into thin 3-inch (8-cm) pieces. Reserve.
- Please heat a skillet on medium-high. Heat a tortilla for 30 seconds, or until puffy. Transfer to a platter to make a beef taco. Repeat with the remaining tortillas.
- Place a couple steak pieces in the center of the tortilla, followed by the toppings, cheese, and cilantro. Repeat with the remaining tortillas. Serve and have fun!

- The best steak for tacos is flank or skirt steak (hanging steak), although sirloin and ribeye steak fajitas are also tasty.
- Room temperature steak cooks more uniformly, resulting in juicier beef.
- If you don’t want to use the grill, you may pan fry the steak in a grill pan or cast iron skillet.
- The most genuine Mexican cheese is Cotija, which may be difficult to locate. Another fantastic choice is queso fresco, which may be substituted for feta or Monterey Jack.
