  • Combine the lime juice, orange juice, cumin, garlic, olive oil, salt, and pepper in a medium mixing bowl.
  • Place the steak in the bowl and evenly coat with the marinade. Refrigerate for up to 8 hours or leave at ambient temperature for one hour (see notice).
  • Meanwhile, preheat the grill to medium heat or 400F (204C) and prepare the toppings, such as diced tomatoes, diced red onion, and crumbled cheese.
  • Spray the grill grates with oil spray.
  • Place the steak on the grill and cook for 3-4 minutes each side until medium-rare or medium, checking doneness with an instant-read thermometer (130-140F or 54-60C).
  • Transfer the steak to a cutting board, cover with foil, and set aside for 5 minutes to rest.
  • Cut the steak crosswise, against the grain, into thin 3-inch (8-cm) pieces. Reserve.
  • Please heat a skillet on medium-high. Heat a tortilla for 30 seconds, or until puffy. Transfer to a platter to make a beef taco. Repeat with the remaining tortillas.
  • Place a couple steak pieces in the center of the tortilla, followed by the toppings, cheese, and cilantro. Repeat with the remaining tortillas. Serve and have fun!
