  • 12large Happy Eggs
  • 20oz thawed shredded hash browns or grated potato (see note)
  • 1 cupsshredded cheddar cheesedivided
  • 1tablespoonolive oil
  • 3slicesbaconcooked and crumbled
  • salt & pepperto taste
  • green onionminced, for garnish

Instructions 

  • Preheat the oven to 425 degrees Fahrenheit. Grease a 12-cup muffin tray with cooking spray.
  • Combine hash browns, 1 cup cheddar cheese, and olive oil in a medium mixing basin.
  • Divide the hash brown mixture among the muffin cups, pressing it into the form of each cup with your fingers.
  • Bake for 12-15 minutes, or until the edges are golden.
  • Fill each muffin cup with one egg. Season with salt and pepper to taste.
  • Top with the remaining cup cheddar cheese and crumbled bacon.
  • Reduce the heat to 350°F and bake for another 15 minutes, or until the egg whites have set.
