Ingredients 

  • 13ozground pork
  • 5ozshrimppeeled, deveined, and chopped
  • 3dried shiitake mushrooms
  • 1tspsoy sauce
  • 3/4tspsalt
  • 2.5tspsugar
  • 5tspcooking wine
  • 2 tablespoons finely minced green onions (just the white portion)
  • 25wonton wrappers
  • optional flying fish roefor serving

Instructions 

Make the Filling

  • Soak the dried mushrooms in boiling water for 10 minutes. Then finely cut them.
  • In a large mixing bowl, combine the pork, salt, soy sauce, cooking wine, and sugar. For approximately 30 seconds, stir thoroughly with a spoon or your hands until the mixture turns pasty.
  • Mix in the mushrooms, shrimp, and green onions until barely mixed.

Make the Shumai

  • Form an O with your forefinger and thumb.
  • Cover the O with a wonton wrapper. Fill the wrapper with a heaping spoonful of the filling.
  • Add extra filling using a butter knife or the back of a spoon until it is level with the top of the wrapper.
  • Place the filled wrapper on a work surface and flatten the dumpling’s base with your fingertips.

Steam the Shumai

  • Line a 12 bamboo steamer (or steamer insert) with hole-punched parchment paper.
  • 2 cups of water should be added to a wok big enough to handle the steamer. Bring to a quick boil over medium-high heat.
  • Fill the steamer with dumplings. Place the wok over the simmering water and cover with the lid.
  • Steam for 8 minutes, or until the dumplings’ internal temperature reaches 165F on an instant-read thermometer.
  • Remove the steamer from the pan and top each dumpling with a scattering of roe or a single green pea.

Make the Dipping Sauce

  • Combine 3 parts soy sauce, 1 part vinegar, and sriracha to taste to make a fast and simple dipping sauce. Mix well and serve with the dumplings.
